I discovered a delightful little pastry at our local Mitsuwa supermarket this past weekend called “butter mochi.” Although butter mochi is made with rice flour (and naturally gluten free!), it is not at all chewy or glutinous like regular mochi. Butter mochi is more like a moist, delicately flavored, delicious cake. MMMMMMMMMMMM……I am now wishing we didn’t finish the last piece yesterday!

We sampled Mikawaya butter mochi, but I found a few recipes (posted below), and it seems like it would be fun and relatively easy to make. The end result is worth the effort!
