I was trying to do a side dish that was a little festive in order to stave off the winter blues, but I also wanted something nutritious, fast and simple. My local supermarket had carrots and ginger on sale, so the choice was easy.
My quick preparation synopsis:
- Slice up some carrots and ginger (to taste.) Add to baking dish.
- Drizzle with oil (I used some olive oil and a bit of sesame oil for flavor.)
- Sprinkle with sugar and a pinch of salt.
- Toss together, cover with foil, and place in heated oven.
- Check tenderness after 2o minutes. Drizzle carrots with maple syrup (to taste), cover, and return to oven until desired tenderness is reached.
