Serves: 3 cups
  • 5 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 4 cups milk
  • 2 teaspoons salt
  • ½ teaspoon freshly grated nutmeg (optional)
  1. In a sauce pan over med-low heat, melt the butter.
  2. Add the flour to the melted butter and mix until smooth.
  3. Cook the flour/butter mixture until its a golden color. about 6 mins.
  4. Meanwhile, in another sauce pan heat the milk until it is about to boil.
  5. Add the hot milk to the butter/flour mixture a cup at a time. Whisk continuously until all the milk is added and the mixture is very smooth.
  6. Bring it to a boil, stirring constantly, and cook for about 10 minutes. You will notice it thickening as you stir.
  7. Remove from heat.
  8. Season with the salt and nutmeg.
  9. Set aside until you are ready to use it.
