Bacon Onion Compote
  • 1 White Onion, sliced thin
  • ½ cup of cooked Bacon, chopped
  • 1 tsp Neutral flavored Oil (safflower, canola, grapeseed etc.)
  • 1 tsp Thyme
  • Salt & Pepper to taste
  • 1 Tbsp Balsamic vinegar
  1. Place bacon on a parchment paper lined baking sheet and place in cold oven, then turn oven to 400 degrees and bake until golden brown(approximately 17 minutes). Set aside to cool.
  2. Heat a cast iron skillet to medium high and pour in the oil.
  3. Add onions and stir periodically until caramelized(approximately 15-20 minutes).
  4. Toss in chopped bacon, thyme, salt and pepper and cook a few more minutes.
  5. Transfer to a bowl and set aside to cool.
  6. Toss Balsamic vinegar with mixture.
  7. (Optional) Pulse mixture in food processor for a spreadable, more jam like consistency.
