Simple Roasted Chicken in the Dutch Oven

  • 1 whole chicken
  • ½ onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • Butter
  • 1 Bay leaf
  • Olive oil
  • Salt
  • Pepper
  • Paprika
  1. Preheat oven to 375.
  2. Drizzle olive oil in bottom of Dutch oven.
  3. Rinse chicken in cold water. Pat dry.
  4. Sprinkle salt, pepper, and paprika on both sides of the chicken.
  5. Place chicken breast side up in Dutch oven.
  6. Pat butter on chicken.
  7. Add vegetables and bay leaf to pot.
  8. Cover and place inside oven
  9. Cook for about an hour and a half, or until internal temperature is 185F
  10. Remove the lid and allow the chicken to brown for 5-10 minutes
  11. Remove from the oven and let it rest before serving
