Carrots with Ginger and Maple Syrup
  1. Slice up some carrots and ginger (to taste.) Add to baking dish.
  2. Drizzle with oil (I used some olive oil and a bit of sesame oil for flavor.)
  3. Sprinkle with sugar and a pinch of salt.
  4. Toss together, cover with foil, and place in heated oven.
  5. Check tenderness after 20 minutes.
  6. Drizzle carrots with maple syrup (to taste), cover, and return to oven until desired tenderness is reached.
